Fish in the scombridae family, such as tuna, mackerel, and bonito, are the most common sources of illness. However, other fish, such as marlin, mahi-mahi, and bluefish, may also cause scombroid fish poisoning. The histamines are heat-resistant, therefore allowing the bacteria to survive when canned or cooked.
